Bromated

Bromated refers to a substance that contains bromine, typically in the form of a bromate ion (BrO3⁻). Bromate ions are polyatomic ions consisting of one bromine atom and three oxygen atoms. They are commonly encountered in chemistry as salts, such as potassium bromate (KBrO3) or sodium bromate (NaBrO3). These salts are often used as oxidizing agents.

In some industrial applications, bromate was historically used as a dough conditioner in baking. It helped strengthen dough and improve the texture and rise of baked goods. However, concerns about its potential carcinogenicity have led to its ban or restriction in many countries, including the United States and the European Union.

Bromate can also be formed as a byproduct of water disinfection processes, particularly when ozone is used in the presence of bromide ions. This can occur in drinking water treatment. Consequently, regulatory bodies set limits for bromate levels in drinking water to ensure public health safety. Exposure to bromate can occur through ingestion of contaminated food or water. Research indicates that bromate is a suspected carcinogen, with studies suggesting a link to kidney and thyroid tumors in animal models. Therefore, minimizing exposure to bromated compounds is generally recommended.
