Arvoviineihin is a Finnish term that translates to "noble rot wines" or "botrytized wines." These wines are produced from grapes that have been affected by a specific type of fungus, Botrytis cinerea. This fungus, under certain climatic conditions, pierces the grape skins, allowing moisture to evaporate from the berries. This process concentrates the sugars, acids, and flavor compounds within the grape, leading to wines with intense sweetness and complex aromas.

The development of noble rot requires a delicate balance of moisture and dryness. Humid mornings encourage the fungus to grow, while dry, sunny afternoons help to dry out the grapes. Regions with this specific microclimate, such as Sauternes in France, Tokaj in Hungary, and certain areas in Germany and Austria, are renowned for producing high-quality arvoviineihin.

The winemaking process for arvoviineihin is labor-intensive. The affected grapes are often hand-picked in several passes, selecting only those berries that have reached the optimal level of botrytization. This selective harvesting contributes to the high cost of these wines.

Arvoviineihin are typically sweet, with flavors ranging from honey, apricot, and marmalade to more complex notes of saffron, ginger, and dried fruit. Despite their sweetness, they possess a high level of acidity that prevents them from being cloying, creating a balanced and lingering finish.
