Aardappelstamppot

Aardappelstamppot is a traditional Dutch dish made from mashed potatoes mixed with one or more other ingredients. The term "stamppot" literally translates to "mash pot" in Dutch. It is a hearty and simple meal, often considered comfort food and is particularly popular during the colder months.

The most basic form of aardappelstamppot uses only mashed potatoes. However, it is more commonly prepared with vegetables mixed into the mashed potatoes. Popular vegetable additions include kale (boerenkoolstamppot), sauerkraut (zuurkoolstamppot), endive (andijviestamppot), and carrots and onions (hutspot). Other variations might include spinach or Brussels sprouts.

The mashed potatoes are typically prepared by boiling potatoes until soft, then mashing them, often with milk and butter to achieve a creamy consistency. The chosen vegetable is then usually cooked separately or added to the boiling potatoes in the latter stages of cooking. Once the vegetables are tender, they are mixed directly into the mashed potatoes. Seasoning is usually kept simple, often just salt and pepper.

Aardappelstamppot is traditionally served with a piece of smoked sausage (rookworst) or sometimes with gravy, meatballs, or even fried bacon. It is a staple in Dutch cuisine and is widely enjoyed across the Netherlands. Its simplicity, affordability, and warming qualities make it a beloved dish for many.
