Historically, these stones have been essential for maintaining the sharpness of implements ranging from kitchen knives and woodworking tools to swords and agricultural equipment. The effectiveness of an élezkő depends on its grit size, which determines the degree of abrasion. Finer grits are used for honing and polishing, producing a very sharp edge, while coarser grits are used for reshaping and repairing damaged edges.

The composition of élezkövek varies widely, with many being sedimentary or metamorphic rocks rich in hard minerals like quartz or silicon carbide. The process of sharpening involves drawing the blade across the surface of the wetted stone, creating a friction that grinds away minuscule amounts of metal from the blade's edge.
