The fermentation typically proceeds in two main steps. First, ethanol (alcohol), commonly found in alcoholic beverages like wine or cider, is oxidized to acetaldehyde. This initial oxidation is catalyzed by enzymes within the bacteria. Subsequently, acetaldehyde is further oxidized to acetic acid. This second step is also mediated by bacterial enzymes. Factors such as temperature, oxygen availability, and the concentration of ethanol and acetic acid can influence the rate and efficiency of the fermentation.
