Tastings are structured sessions in which participants evaluate the sensory properties of food and beverages. They can be informal, such as a home wine tasting, or formal, such as a professional panel conducted for quality control or product development. The core aim is to describe and compare flavors, aromas, textures, and appearance, often using standardized tasting notes and scales.

Common types include wine tastings, beer tastings, coffee tastings, chocolate tastings, and olive oil tastings. In each case samples are presented in a controlled sequence, often as flights, with attention to serving temperature, glassware, and portion size. Tastings may emphasize comparison, regional or varietal characteristics, or specific attributes such as sweetness or acidity.

Process and skills involve assessing appearance first, then aroma, then palate. Techniques such as sniffing, aerating, slurping, and spitting are used to manage palate fatigue and enable more samples to be evaluated. Descriptors should be noted and can range from broad terms like fruity or nutty to more specific notes such as lemon zest or cocoa. Scoring may follow numerical scales, and blind tasting is used to reduce bias. Training programs and sensory panels aim to improve consistency and reliability.

Setting and equipment influence results: neutral lighting, minimal distractions, clean glassware, and appropriate temperatures help accuracy. Palate cleansers and careful sample order reduce carryover effects. Record keeping, standardized procedures, and, when applicable, statistical analysis support quality control, product development, and consumer education. Tastings reflect subjective perception but are guided by sensory science and shared terminology.
