Sérblöndur are a type of Icelandic fermented shark. The process involves burying the Greenland shark, a species known for its toxic flesh, in a shallow pit or a box filled with sand and stones. This process allows the shark to ferment for several weeks to months. During fermentation, the shark's flesh, which is rich in urea and trimethylamine oxide, undergoes decomposition, rendering it edible.

After fermentation, the shark meat is exhumed and typically hung to dry for another few months. This drying process further reduces moisture content and intensifies the flavor. The resulting dish has a very strong ammonia-like odor and a distinctive taste that is often described as pungent and acquired.

Sérblöndur is traditionally consumed in Iceland, particularly during the Þorrablót festival, a midwinter celebration. It is often served in small cubes, accompanied by a shot of Brennivín, an Icelandic schnapps, which is believed to aid digestion and complement the strong flavor of the shark. While it is a significant part of Icelandic culinary heritage, its consumption is not widespread, and it is generally considered a delicacy rather than a staple food. The preparation and consumption of sérblöndur are deeply rooted in Icelandic culture and history, reflecting traditional methods of food preservation in a harsh climate.
