The number indicates the type of fatty acid used, and a higher number generally signifies a longer fatty acid chain. For example, Polysorbate 20 is made with lauric acid, while Polysorbate 80 uses oleic acid. They are used in a vast array of products. In food, they can be found in baked goods, ice cream, and salad dressings to improve texture and prevent ingredient separation. In cosmetics, they are ingredients in lotions, shampoos, and makeup, aiding in the even distribution of oils and fragrances.
