Piirits is a traditional distilled spirit produced on the Piirian archipelago. It is typically made from a mash of malted barley or rye, flavored with local botanicals such as juniper, sea buckthorn, and citrus zest, and sometimes honey. The mash is fermented and distilled in copper pot stills. The resulting spirit is usually between 40 and 45 percent ABV and may be bottled after a short resting period or aged to develop additional depth.
