Piirits is a traditional distilled spirit produced on the Piirian archipelago. It is typically made from a mash of malted barley or rye, flavored with local botanicals such as juniper, sea buckthorn, and citrus zest, and sometimes honey. The mash is fermented and distilled in copper pot stills. The resulting spirit is usually between 40 and 45 percent ABV and may be bottled after a short resting period or aged to develop additional depth.

Historically, piirits played a central role in coastal festivals and harbor rituals, with production concentrated in family-run distilleries. In the 18th and 19th centuries, larger operations emerged, but many producers now emphasize small-batch, artisan methods and locally sourced ingredients. Modern piirits often undergo oak aging, ranging from several months to several years, which softens the spirit and adds vanilla and resin notes.

Varieties include a clear, unaged form, an amber-aged expression, and spiced versions that incorporate botanicals such as cinnamon, clove, or cardamom. Flavor profiles span clean and grain-forward to complex, with juniper, citrus, and wood shared across styles. Piirits is typically enjoyed neat at cellar temperature to appreciate aroma, or used as a base in regional cocktails and pairings with seafood and smoked dishes.
