A pasteurizer is a device or process used to eliminate harmful microorganisms in food and beverages through controlled heating. The method is named after Louis Pasteur, the French scientist who developed the technique in the 1860s while studying wine spoilage. Pasteurization involves heating liquids or foods to specific temperatures for predetermined periods to kill pathogenic bacteria, yeasts, and molds while preserving nutritional value and flavor.

The most common application of pasteurization is in milk production, where raw milk is heated to temperatures between 145°F and 161°F (63°C to 72°C) for varying durations depending on the method used. The two primary techniques are the low-temperature, long-time (LTLT) method and the high-temperature, short-time (HTST) method. Ultra-high temperature (UHT) pasteurization heats products to 280°F (138°C) for 2-5 seconds, allowing for extended shelf life without refrigeration.

Pasteurizers are also used for juices, beer, wine, and other beverages. The process effectively eliminates organisms such as Salmonella, E. coli, and Listeria while maintaining product quality. Unlike sterilization, which destroys all microorganisms, pasteurization targets harmful pathogens while preserving beneficial components and taste characteristics.

Industrial pasteurizers typically consist of heat exchangers, temperature controls, and holding tubes or chambers. The equipment must maintain precise temperature regulation to ensure effectiveness while preventing overheating that could compromise product quality. Batch pasteurizers process smaller quantities in tanks, while continuous flow systems handle large volumes in commercial operations.
