Ollita is the diminutive form of olla in Spanish, meaning a small pot or cooking vessel. The diminutive suffix -ita conveys small size or affection. In usage, ollita can refer to a small clay or ceramic pot used for cooking, as well as to dishes prepared and served in such a pot.

Across Spanish-speaking regions, ollas and ollitas are traditional cookware, valued for their heat-retaining properties. A typical ollita is used for slow simmering of soups, stews, beans, and rice, and may be placed on a table to keep contents warm. In many households, an ollita is also used to serve individual portions at the table, giving a rustic or homestyle presentation.
