küpsis

Küpsis is the Estonian word for a small baked sweet or biscuit. In everyday language it refers to edible cookies, while in information technology the term küpsis designates an HTTP cookie—a small data file stored by a web browser to remember information about a user or a session.

In cooking, küpsised are typically made from flour, sugar, fat and often eggs, with flavorings such as vanilla, cocoa, nuts or chocolate chips. They vary widely in texture and shape, including crisp butter cookies, soft drop cookies, and sandwich cookies. The dough is usually mixed, shaped and baked until set and lightly golden.

Storage and shelf life depend on ingredients and moisture. Dry cookies keep for several weeks in an airtight container kept in a cool, dry place; soft cookies may lose their texture more quickly and require shorter storage. Perishable fillings reduce shelf life and are best refrigerated.
