Kapszaicinoids are a group of naturally occurring chemical compounds found in plants of the Capsicum genus, commonly known as chili peppers. These compounds are responsible for the characteristic pungent or "hot" sensation experienced when consuming these peppers. The most well-known and abundant kapszaicinoid is capsaicin, followed by dihydrocapsaicin, nordihydrocapsaicin, homodihydrocapsaicin, and homocapsaicin.

The chemical structure of kapszaicinoids features a vanillyl group attached to a fatty acid chain. This structure allows them to bind to specific pain receptors in the body, primarily the TRPV1 (transient receptor potential vanilloid 1) channel, which is also activated by heat. This binding triggers a signal that the brain interprets as burning or heat, even though no actual physical burning is occurring. The intensity of the heat is related to the concentration and specific type of kapszaicinoid present.

Beyond their role in imparting pungency, kapszaicinoids have been studied for various potential biological activities. Research has explored their analgesic properties, with capsaicin being used topically in creams and patches to alleviate certain types of pain. They have also been investigated for their potential effects on metabolism, appetite suppression, and cardiovascular health. However, many of these applications are still under active scientific investigation, and their efficacy and safety for widespread medicinal use are subject to ongoing research and clinical trials. The cultivation and selective breeding of chili peppers have also influenced the diversity and concentration of kapszaicinoids found in different varieties.
