Félfolyadékok, also known as semi-liquids or pastes, represent a state of matter that exhibits properties of both liquids and solids. They are characterized by their ability to flow under stress, but also to resist deformation when at rest or under low stress. This behavior is a result of complex internal structures that can break down and reform.

The defining characteristic of félfolyadékok is their non-Newtonian fluid behavior. Unlike Newtonian fluids, whose viscosity remains constant regardless of the applied shear rate, the viscosity of félfolyadékok changes. This can manifest in different ways. Shear-thinning fluids, a common type of félfolyadék, become less viscous and flow more easily when stirred or agitated. Examples include ketchup, paint, and yogurt. Conversely, shear-thickening fluids, less common, increase in viscosity under stress, becoming more resistant to flow. Oobleck, a mixture of cornstarch and water, is a classic example.

The internal structure of félfolyadékok often involves dispersed solid particles or molecules suspended within a liquid medium. These particles can interact through attractive or repulsive forces, forming temporary networks or structures. When stress is applied, these structures can break, allowing the material to flow. Upon removal of stress, the structures can reform, leading to the solid-like behavior at rest.

Applications for félfolyadékok are widespread. In industry, they are found in lubricants, inks, cosmetics, and food products. Understanding their rheological properties is crucial for processing, storage, and performance. For instance, controlling the shear-thinning behavior of paint is essential for easy application while preventing drips. In biology, many biological materials like blood and mucus also exhibit semi-liquid properties.
