Food and feed applications include edible mushrooms and fungal biomass used as protein sources, flavor compounds, and fermentation starters. Mycoprotein products and fungal-derived enzymes also find use in food processing, processing aids, and bioprocess streams.

Safety, regulation, and sustainability are considerations for fungus-derived products. Potential risks include mycotoxins and contamination, requiring quality control and regulatory oversight. Fungal production can offer renewable, scalable alternatives with lower land and water use compared with some traditional supply chains, supporting ongoing research in biotechnology and sustainable industry.
