Ethyl esters are a class of organic compounds derived from carboxylic acids and ethanol. The defining feature is an ethyl group attached to the ester oxygen, giving the general structure R-COO-CH2CH3, where R is the acyl group from the corresponding carboxylic acid. The simplest member is ethyl acetate (ethyl ethanoate). Ethyl esters are common intermediates and solvents in organic synthesis and industry.

Preparation of ethyl esters typically proceeds by esterification of a carboxylic acid with ethanol in the presence of an acid catalyst (Fischer esterification), or by treating an acyl chloride with ethanol. They can also be generated by transesterification of other esters. Dry reaction conditions and removal of water favor higher ester yields.

Ethyl esters span a wide range of properties depending on the R group. They are usually liquids with relatively low polarity and often possess pleasant odors. Ethyl acetate is a widely used solvent for coatings, inks, and nail polish removers. In the flavor and fragrance industry, esters such as ethyl butyrate and ethyl benzoate contribute fruity notes and perfumes. Ethyl esters of fatty acids are important in biodiesel and in certain cosmetics.

Safety and occurrence: Ethyl esters are generally flammable and can be irritants. They hydrolyze to the corresponding carboxylic acid and ethanol under acidic or basic conditions. In industrial use, handling requires adequate ventilation and awareness of ignition sources. Environmentally, many esters are moderately biodegradable but can contribute to air and water pollution if released in large quantities.
