Drying out, or simply drying, is the process of removing moisture from a material or substance. The goal is to reduce water content to a specified level to improve stability, shelf life, storage, or usability. Drying is widely used in food processing, pharmaceuticals, wood and textiles, ceramics, electronics, and in everyday activities such as drying clothes.

Moisture content, equilibrium moisture content, and the drying rate are central concepts. The drying curve typically shows an initial fast phase when surface moisture is abundant, followed by a slower phase governed by internal diffusion of water to the surface. Drying methods aim to remove water without damaging the product.

Common methods include natural air drying and forced convection with heated air; hot-air ovens and belt dryers; freeze-drying (lyophilization); vacuum drying; spray drying and drum drying; desiccant drying; and sun drying. The choice depends on product sensitivity, desired moisture level, scale, cost, and energy availability.

Factors affecting drying rate include temperature, humidity, air velocity, surface area, product thickness, porosity, and moisture diffusivity. Heat-sensitive materials require lower temperatures or alternative methods; high-energy drying may cause case hardening, color or flavor changes, or quality loss if not controlled.

Quality control typically targets a specified final moisture content, often expressed as a percentage of mass on a wet basis or dry basis. Improper drying can promote microbial growth or spoilage, while over-drying wastes energy and can harm texture or function. Environmental and safety considerations include energy consumption, dust formation, and handling of hot or volatile substances.
