Deatsetüülatsiooni refers to a chemical reaction where an acetyl group (CH3CO-) is removed from a molecule. This process is often the reverse of acetylation, which involves the addition of an acetyl group. Deacetylation is a crucial biochemical process that occurs in living organisms and plays a significant role in regulating the activity of various biomolecules, particularly proteins.

In biological systems, deacetylation is most commonly associated with histone proteins. Histones are involved in packaging DNA into nucleosomes, and their acetylation status significantly influences gene expression. Acetylation of histones generally leads to a more relaxed chromatin structure, promoting gene transcription. Conversely, deacetylation of histones compacts the chromatin, repressing gene expression.
