Vesisisällölläaktiivisuus, often translated as "water content activity" or "water activity" (aw), is a measure of the unbound water available in a material. It is a crucial parameter in food science, microbiology, and materials science. The scale ranges from 0, representing completely dry material, to 1, representing pure water.

This value is not the same as moisture content, which is the total amount of water present. Water activity specifically refers to the water that is available for chemical reactions and microbial growth. For instance, a high water activity level (above 0.85) in food products can support the growth of bacteria, yeasts, and molds, leading to spoilage. Lowering the water activity, through methods like drying, adding solutes (salt or sugar), or freezing, is a common preservation technique.

In a broader context, water activity influences the physical properties of materials, such as flowability, caking, and shelf life. It is determined by measuring the equilibrium relative humidity of the air in contact with the material. Understanding and controlling water activity is essential for ensuring product quality, safety, and stability across various industries.
