Väriliitteet, often translated as color additives or colorants, are substances intentionally added to food or other products to impart or enhance color. These substances can be derived from natural sources like plants, animals, or minerals, or they can be synthetic. Their purpose is primarily aesthetic, making food more appealing to consumers, but they can also serve functional roles, such as indicating ripeness or identifying a particular flavor.

The use of color additives is subject to strict regulations in most countries to ensure consumer safety. Regulatory bodies like the Food and Drug Administration (FDA) in the United States and the European Food Safety Authority (EFSA) evaluate the safety of color additives before they can be approved for use. Approved color additives are typically assigned specific identifiers, such as a "CI" number (Colour Index) or a designation like "FD&C" (Food, Drug, and Cosmetic) in the US.

Natural color additives include pigments such as carotenoids (found in carrots and tomatoes), anthocyanins (found in berries), and chlorophyll (found in green leafy vegetables). Synthetic color additives, often referred to as artificial colors, are manufactured chemically and can provide brighter, more stable colors than many natural alternatives. Examples include tartrazine (Yellow 5) and allura red AC (Red 40).

Concerns have been raised regarding the potential health effects of some synthetic color additives, particularly in relation to hyperactivity in children. This has led to ongoing research and sometimes voluntary or mandatory labeling changes in different regions. The choice between natural and synthetic color additives often involves a balance between desired color properties, cost, stability, and regulatory approval.
