Tupig

Tupig is a Filipino delicacy originating from the Ilocos region of the Philippines. It is a type of suman, a rice cake made from glutinous rice. The defining characteristic of tupig is its preparation method and the use of young coconut. The glutinous rice is ground and mixed with coconut milk, sugar, and sometimes grated young coconut meat. This mixture is then wrapped in young banana leaves and grilled over hot coals.

The grilling process gives tupig a distinct smoky flavor and a slightly charred exterior. The inside remains soft and sticky, with the sweetness balanced by the richness of the coconut milk. Tupig is typically enjoyed as a snack or dessert. It is often sold by street vendors in the Ilocos region, especially during local festivals and celebrations. The preparation is labor-intensive, involving hand-grinding the rice and carefully grilling each piece. Variations of tupig may include adding other ingredients like cheese or ube (purple yam) for different flavors and colors, though the classic version remains the most popular. The taste is often described as sweet, creamy, and slightly smoky.
