Toidukultuurtaimedeks (Estonian: “food culture plants”) is a term used in Baltic agricultural and ethnobotanical literature to describe plant species selected and cultivated for their central role in regional food traditions. The concept originated in the late 20th century as part of a broader movement to document and preserve food heritage in Estonia, Latvia and Lithuania. It combines “toidukultuur”, meaning food culture, with “taimedeks”, literally “into plants”, highlighting the transformation of cultural practices into agricultural production.

Typical toidukultuurtaimedeks include traditional cereal crops such as rye (Secale cereale) and barley (Hordeum vulgare), root vegetables like beet (Beta vulgaris) and swede (Brassica napus subsp. rapa), and forage legumes that support pastoral systems. Additionally, a range of herbs and spices—juniper (Juniperus communis), chamomile (Matricaria chamomilla), and nettle (Urtica dioica)—have been cultivated for culinary, medicinal, and brewing purposes. In some communities, fruit trees such as apple (Malus domestica) and hawthorn (Crataegus spp.) form part of the food culture plant portfolio.

The cultivation of toidukultuurtaimedeks is guided by traditional knowledge and modern agronomic practices.
