Säilymismenetelmät, known in English as preservation methods or food preservation techniques, refer to a diverse range of processes used to prevent or slow down the spoilage of food. These methods aim to extend the shelf life of food products, making them safe and available for consumption over longer periods. They work by inhibiting the growth of microorganisms such as bacteria, yeasts, and molds, as well as by preventing or slowing down oxidation and enzymatic degradation.

Common preservation methods include refrigeration and freezing, which lower the temperature to significantly slow down biological and chemical processes. Heating, such as pasteurization and sterilization, kills or inactivates microorganisms and enzymes. Drying, or dehydration, removes water, which is essential for microbial growth. Other techniques involve adding preservatives, either natural or artificial, such as salt, sugar, or specific chemical compounds, which create an environment unfavorable for spoilage. Fermentation utilizes beneficial microorganisms to produce acids or alcohol, which inhibit spoilage. Additionally, vacuum packing and modified atmosphere packaging reduce the oxygen available to spoilage organisms. Irradiation is another method that uses ionizing radiation to kill microorganisms and insects. The choice of method depends on the type of food, desired shelf life, and available resources.
