Stärkeaufnahme, also known as starch uptake, refers to the process by which organisms absorb and utilize starch as an energy source. Starch is a complex carbohydrate, a polysaccharide composed of glucose units, and serves as a primary energy storage molecule in plants. For many organisms, including humans and various microorganisms, direct absorption of intact starch molecules is not possible due to their large size.

The initial step in starch uptake typically involves digestion or breakdown. In animals, this process begins in the mouth with salivary amylase, which starts hydrolyzing starch into smaller polysaccharides and disaccharides like maltose. Further breakdown occurs in the small intestine by pancreatic amylase, yielding maltose and other simple sugars. These smaller molecules can then be absorbed across the intestinal wall into the bloodstream. Microorganisms, such as bacteria and fungi, secrete extracellular enzymes called amylases that break down starch in their environment. The resulting simpler sugars are then transported into the microbial cells for metabolism.

The efficiency of starch uptake can be influenced by various factors, including the physical form of the starch, the presence of other dietary components, and the physiological state of the organism. For example, cooked or processed starches are generally more digestible than raw starches. Resistant starch, a portion of starch that escapes digestion in the small intestine, can reach the large intestine where it is fermented by gut bacteria, providing benefits similar to dietary fiber. Understanding starch uptake is crucial in fields ranging from nutrition and digestive physiology to biotechnology and food science.
