Spyttedannelse, also known as salivation or the production of saliva, is a vital physiological process regulated by the autonomic nervous system. It involves the exocrine glands of the mouth, primarily the parotid, submandibular, and sublingual glands, along with numerous minor salivary glands scattered throughout the oral mucosa. These glands secrete saliva, a complex fluid composed of water, electrolytes, enzymes, mucus, and various other organic and inorganic substances.

The primary functions of saliva are multifaceted. It plays a crucial role in lubrication and moistening food, facilitating mastication and swallowing. Enzymes present in saliva, such as amylase and lingual lipase, initiate the chemical digestion of carbohydrates and fats, respectively. Saliva also contributes to taste perception by dissolving food molecules, allowing them to interact with taste receptors. Furthermore, its buffering capacity helps neutralize acids produced by bacteria in the mouth, thus protecting tooth enamel and preventing dental caries. Saliva also possesses antimicrobial properties, aiding in oral hygiene by washing away food debris and harboring antibacterial compounds.

Saliva production can be stimulated by various factors. Mechanical stimuli, such as chewing or the presence of food in the mouth, trigger reflex salivation. Chemical stimuli, including the taste and smell of food, also play a significant role. In contrast, emotional states like fear or anxiety can lead to a decrease in saliva production, resulting in dry mouth (xerostomia). Maintaining adequate salivation is essential for overall oral health and efficient digestion.
