Sannindalegum

Sannindalegum is a traditional South Indian dish, often prepared in Karnataka and Tamil Nadu. It is essentially a lentil-based stew or curry, known for its rich flavor and nutritional value. The primary ingredient is a mix of lentils, commonly toor dal (split pigeon peas) and chana dal (split chickpeas), which are slow-cooked until they achieve a soft, porridge-like consistency.

The distinct characteristic of sannindalegum comes from its tempering or 'tadka'. This involves frying a blend of spices in ghee or oil, which typically includes mustard seeds, cumin seeds, dried red chilies, curry leaves, and asafoetida (hing).
