Sambols

Sambols are a category of condiments, relishes, or sauces originating from Southeast Asia, particularly Indonesia, Malaysia, and Singapore. They are typically made with a base of fresh or cooked ingredients, pounded or finely chopped, and often seasoned with chili peppers, garlic, shallots, and other spices. The consistency and texture of sambols can vary widely, from very coarse pastes to smoother sauces.

The core components of most sambols include chili peppers, which provide heat and flavor. Other common ingredients might include shrimp paste (terasi), lime juice, vinegar, sugar, ginger, lemongrass, and various herbs. The preparation often involves grinding these ingredients together using a mortar and pestle, though modern blenders are also used.
