Saccharification is a crucial step in many industrial processes, particularly in the production of biofuels and alcoholic beverages. It involves the breakdown of complex carbohydrates, such as starch and cellulose, into simpler sugars, primarily glucose. This transformation is typically achieved through enzymatic hydrolysis or acid hydrolysis.

Enzymatic hydrolysis utilizes specific enzymes, like amylase and cellulase, to catalyze the conversion of polysaccharides into monosaccharides or disaccharides. Amylase enzymes are commonly used to break down starch into glucose, maltose, and dextrins. Cellulase enzymes are employed to break down cellulose, a major component of plant cell walls, into glucose. This method is generally favored for its specificity and efficiency at moderate temperatures and pH levels, minimizing the production of unwanted byproducts.

Acid hydrolysis, on the other hand, uses strong acids, such as sulfuric acid or hydrochloric acid, to break the glycosidic bonds within complex carbohydrates. While effective, this method can lead to the degradation of sugars into inhibitory compounds like furfural and hydroxymethylfurfural, which can negatively impact subsequent fermentation steps.
