Ruskakulla

Ruskakulla is a traditional Finnish pastry, often enjoyed during the autumn season, hence its name which translates to "autumn bun" or "ruska bun" in English, referring to the colorful foliage of fall. These sweet buns are typically made from a rich, yeasted dough, similar to a cinnamon roll but with distinct flavorings. Common ingredients include cardamom, cinnamon, and often finely chopped nuts like almonds or hazelnuts. They are frequently brushed with melted butter and sprinkled with sugar before or after baking.

The dough for ruskakulla is usually enriched with butter and eggs, giving it a soft and tender crumb. After rising, it is rolled out and spread with a filling. This filling can vary, but a common combination is butter, sugar, and spices. Some recipes might also include raisins or dried cranberries. The dough is then rolled up, sliced into individual portions, and placed in baking molds or on a baking sheet to rise again.

Ruskakulla are baked until golden brown and fragrant. They are best enjoyed warm, perhaps with a cup of coffee or tea, making them a popular treat for fika, the Swedish and Finnish tradition of a coffee break.
