Ridadepõhist

Ridadepõhist, also known as *ridadepõhi* or *ridadepõhiõli*, refers to a traditional Estonian method of preparing and preserving fish, particularly herring, using a combination of salt, fat, and fermentation. The process is rooted in Baltic and Scandinavian maritime cultures, where fish preservation was essential for survival during long winters.

The technique involves salting fresh herring and allowing it to ferment in a mixture of saltwater and fish oil, often in wooden barrels or clay pots. Over time, the fish develops a distinct tangy flavor and a rich, oily texture. The resulting product is a type of fermented fish paste or spread, sometimes used as a condiment or ingredient in soups, stews, and other dishes.

Ridadepõhist is particularly associated with coastal regions of Estonia, where it was historically a practical way to store fish for extended periods. The process relies on natural fermentation, which helps break down the fish’s proteins and enhances its shelf life. While modern refrigeration has reduced its necessity, ridadepõhist remains a cultural tradition and a unique culinary specialty.

Today, it is sometimes enjoyed as a spread on bread, mixed into mashed potatoes, or incorporated into traditional Estonian dishes like *verivorst* (blood sausage) or *kartulipuder* (mashed potatoes).
