Rheometriával is the scientific study of the flow of matter and its deformation under applied stress. It encompasses both the study of fluids, such as liquids and gases, and the study of viscoelastic solids, which exhibit properties of both liquids and solids. The primary goal of rheometry is to understand the relationship between stress, strain, and time, which defines a material's rheological behavior.

Key concepts in rheometry include viscosity, which measures a fluid's resistance to flow, and elasticity, which describes a material's ability to return to its original shape after deformation. Many materials, especially polymers and complex fluids, exhibit non-Newtonian behavior, meaning their viscosity changes with the applied shear rate or stress.
