Reikäleipäjuusto
Reikäleipäjuusto is a Finnish cheese characterized by its distinctive holey texture, which gives it its name ("reikäleipä" meaning "holey bread" and "juusto" meaning "cheese"). This unique appearance is a result of its production process. The cheese is made from cow's milk, often skimmed, and traditionally uses a rennet-coagulated curd. During the pressing stage, the curd is allowed to develop internal voids, creating the characteristic holes.
The flavor of reikäleipäjuusto is typically mild and slightly tangy, with a firm yet somewhat elastic texture.
