Pruunistaja

Pruunistaja, literally “browning agent” in Estonian, is a substance or material that promotes or produces browning of a surface, product, or tissue. The term is used across different industries to describe agents that enhance color development, often by facilitating chemical reactions or pigment formation.

Browning mechanisms and examples vary by field. In food processing, browning is commonly the result of heat-induced reactions such as the Maillard reaction or caramelization, and substances that promote these processes can be classified as pruunistajad. Common examples include caramel colors and ingredients that alter pH or reactivity to deepen color during cooking. In cosmetics, self-tanning products rely on agents like dihydroxyacetone that react with skin tissues to create a brown pigment.
