It can be performed by a dry method, where granulated sugar is heated in a pan without liquid, or a wet method, where sugar is dissolved in water before heating. In the dry method, the sugar is heated with gentle agitation or swirling to promote even melting; in the wet method, a sugar syrup forms and cooks until it darkens, which can be more controllable and less prone to crystallization.

Important factors include temperature, duration, and sugar type. Caramelization starts around 170°C (338°F); the color deepens from pale amber to deep amber as it approaches higher temperatures. Overheating can produce bitter flavors and burnt sugar. To prevent crystallization and ensure smooth texture, some cooks add a small amount of acid or use corn syrup, and avoid abrupt stirring once caramelization begins.

Common uses include caramel sauce, toffee, caramelized fruits such as apples, and as a flavoring or topping for baked goods and desserts like crème brûlée. After caramelization, liquids such as cream or butter are often added carefully to create sauces, as the mixture is extremely hot and can foam vigorously.
