Pourovas

Pourovas are a traditional food item originating from the country of Moldova. They are essentially a type of stuffed pastry, often resembling small dumplings or pies, with a variety of savory fillings. The dough is typically made from flour, water, and sometimes egg, rolled out thin and cut into circles or squares. Common fillings include mashed potatoes, cheese (often bryndza or a similar sheep's milk cheese), mushrooms, or finely chopped meat. Some variations might also include herbs or onions mixed into the filling.

The preparation of pourovas involves placing a spoonful of filling onto a piece of dough, then folding and sealing the edges to create the desired shape. They can be cooked in a few different ways. Many are boiled, similar to pierogi or vareniki, until they float to the surface and the dough is cooked through. Alternatively, pourovas can be pan-fried after boiling or even baked, which gives them a slightly crisper texture. They are often served hot, sometimes with a dollop of sour cream, yogurt, or a sprinkle of fresh dill or parsley. Pourovas are a common dish in Moldovan homes and are also found in restaurants serving traditional cuisine.
