Policas

Policas are a type of fermented sausage originating from Poland. They are typically made from pork, and sometimes beef, seasoned with a variety of spices, which often include garlic, pepper, and marjoram. The name "Policas" is a phonetic approximation in English of the Polish word for sausage, "kiełbasa." The specific ingredients and preparation methods can vary significantly from region to region and even from butcher to butcher within Poland.

Traditionally, Policas are cured and smoked, which gives them a distinctive flavor and a longer shelf life. They can be eaten both hot and cold.
