Perusmakuja

Perusmakuja refers to the fundamental tastes that humans can perceive. Historically, four basic tastes were recognized: sweet, sour, salty, and bitter. These tastes are detected by specialized taste receptors on the tongue and in other parts of the mouth.

More recently, a fifth basic taste, umami, has gained widespread acceptance. Umami is often described as a savory or meaty taste and is associated with compounds like glutamate. The perception of these basic tastes is crucial for identifying nutrients and potential toxins in food.
