Pastöroitujen is a Finnish term that translates to "pasteurized" in English. It refers to a process of treating food, most commonly milk, with heat to kill harmful microorganisms. This process is named after its inventor, Louis Pasteur, a French scientist. The primary goal of pasteurization is to improve food safety by reducing the risk of illness caused by bacteria, viruses, and parasites.

The typical temperature and time for pasteurization vary depending on the food product. For milk, a common method is High-Temperature Short-Time (HTST) pasteurization, which involves heating milk to at least 72 degrees Celsius (161 degrees Fahrenheit) for 15 seconds. Another method is Ultra-High Temperature (UHT) pasteurization, where milk is heated to at least 135 degrees Celsius (275 degrees Fahrenheit) for a few seconds, allowing for a much longer shelf life.

Pasteurization is a crucial step in the modern food industry. While it significantly reduces the number of viable pathogens, it does not sterilize the product, meaning some microorganisms may survive, but usually at levels that do not pose a health risk. The process is carefully controlled to minimize changes to the nutritional value and taste of the food.
