Päikesesooju

Päikesesooju, also known as solar salt or solar salt lick, is a type of salt that is produced through the evaporation of seawater or brine by the heat of the sun. This traditional method of salt production has been used for centuries in various parts of the world, including Estonia, where the term "Päikesesooju" originates.

The process of making Päikesesooju involves collecting seawater or brine in large, shallow ponds. The water is then allowed to evaporate under the sun, leaving behind salt crystals. This method is typically used in areas with high solar intensity and low rainfall, as these conditions are ideal for the evaporation process. The resulting salt is often less refined than that produced through industrial methods, retaining trace minerals and a slightly different texture and flavor.

In Estonia, Päikesesooju has been traditionally used not only as a seasoning for food but also for preserving food, particularly fish and meat. It has also been used in traditional medicine for its alleged health benefits, although these claims lack scientific evidence. The salt is often marketed as a more natural and less processed alternative to table salt.

The production of Päikesesooju is generally considered to be more environmentally friendly than industrial salt production methods. However, it requires large areas of land and can be affected by weather conditions, making it a less efficient and more labor-intensive process. Despite these challenges, the demand for artisanal and natural products has led to a resurgence of interest in traditional salt production methods like Päikesesooju.
