Overmetning

Overmetning, or supersaturation, is a state in which a solution contains a higher concentration of dissolved solute than the equilibrium solubility at a given temperature and pressure. It is a metastable condition: thermodynamically the excess solute would prefer to precipitate as a solid, but kinetic barriers delay this process.

Supersaturation can arise in several ways. It commonly forms when a hot, saturated solution is slowly cooled without precipitation, or when solvent is evaporated from a solution. It can also occur when a solute is transferred to a solvent in which its solubility is reduced (an anti-solvent) or during reactions that generate dissolved product faster than it can crystallize. The result is a solution that remains dissolved beyond its normal limit.

Stability and crystallization are governed by nucleation, the initial formation of solid particles. Supersaturated solutions are sensitive to disturbances such as impurities, surfaces, agitation, or shocks that can lower the energy barrier to nucleation and trigger crystallization. Additives, impurities, and higher viscosity can stabilize the supersaturated state, while seeds or deliberate seeding can promote controlled crystallization.

Applications and examples include crystallization processes in the pharmaceutical, chemical, and materials industries, where controlled supersaturation helps obtain desired crystal forms and sizes. In everyday contexts, supersaturation underlies phenomena such as rock candy formation from sweet solutions or the controlled precipitation in various culinary and industrial processes. Typical ways to induce controlled crystallization are seeding, slow cooling, gradual solvent evaporation, or anti-solvent precipitation.

Risks and limitations involve unwanted precipitation, fouling of equipment, or inconsistent product quality if supersaturation is not properly managed. Understanding and controlling overmetning is essential in crystallization design and process reliability.
