Nartov

Nartov is a traditional fermented beverage originating from the Circassian (Adyghe) culture in the Caucasus region. It is a form of mildly alcoholic drink produced through the fermentation of cereal grains, primarily barley or wheat. Nartov holds cultural significance among Circassian communities, often made during communal festivals, celebrations, and social gatherings.

The preparation of Nartov involves germinating the grains to activate natural enzymes, followed by milling and mixing with Water. The mixture is then left to ferment naturally, relying on wild yeast and bacterial cultures present in the environment. The fermentation process can take several days, resulting in a mildly effervescent liquid with a tart flavor and a trace of alcohol, typically less than 4% alcohol by volume.
