Mutarótunar, also known as mutarotation, is a chemical phenomenon observed in certain carbohydrates, particularly sugars, where the optical rotation of a solution changes over time due to an equilibrium between different forms of the molecule. This process occurs when an open-chain form of a sugar interconverts with its cyclic form, resulting in a mixture of stereoisomers that exhibit different optical activities.

In aqueous solutions, many sugars exist in two main forms: the cyclic (ring) form and the linear (open-chain) form. Mutarótunar arises from the dynamic equilibrium between these forms.
