Makkaralaatikko

Makkaralaatikko, literally meaning sausage casserole, is a traditional Finnish baked dish in the family of laatikot, or casseroles. It is usually prepared by combining chopped or sliced sausages with a starchy binder such as boiled rice or mashed potatoes, along with onion, milk, and eggs, and then baking the mixture in the oven until it is firm and lightly browned. The dish is valued for its simplicity, budget-friendliness, and ease of preparation.

Common ingredients include sausages (makkara), cooked rice or mashed potatoes, onion, milk, eggs, salt and pepper. Optional additions include butter or oil for sautéing, a small amount of breadcrumbs for topping, and dried herbs such as marjoram or thyme. Some households favor milder or spicier sausages, or substitute barley for rice. The texture and binding depend on whether rice or potato is used; rice yields a creamier, looser casserole, while potatoes create a firmer result.

To prepare, onions are typically sautéed and mixed with sliced sausages; the binder (rice or mashed potatoes) is cooked or cooled as needed, then stirred with the sausage mixture, eggs and milk. The mixture is seasoned, transferred to a baking dish and baked in a moderate oven (about 180°C) for 40–60 minutes, until set and lightly browned on top. Resting a few minutes before serving helps the structure to set.

Makkaralaatikko belongs to traditional Finnish home cooking and is commonly found in family kitchens, school meals, and festive menus depending on region and season. It is one of several laatikot dishes that use the oven-baked casserole format; it is often served with lingonberries or pickles on the side to provide a contrasting sweet-tart acidity.
