This process results in a firm, intensely flavored product that can be stored for extended periods. The technique is deeply rooted in Finnish culinary history, especially in coastal regions where fish was a staple food.

The preparation involves splitting the fish, typically herring, and generously salting them. The salted fish are then layered tightly in a container, often a wooden barrel or a crock. A heavy weight is placed on top, pressing the fish together. This pressure, combined with the salt, draws out moisture and creates a dense, firm texture. The fish undergo a curing process over several weeks or months, during which the salt penetrates fully and the characteristic flavor develops.
