Kryddighet refers to the sensory quality of spiced flavors in food, describing how strongly a dish is seasoned and how its flavor hints lean toward warmth and pungency. The term encompasses both heat from capsaicin-containing ingredients and the aromatic, peppery notes produced by spices and herbs.

Kryddighet includes heat and aroma, and is influenced by the choice of spices (such as chili peppers, black pepper, cinnamon, cloves, cumin, coriander), preparation methods (toasting, grinding, emulsification), and balance with other flavor elements such as sweetness or acidity.

There is no universal scale for kryddighet in everyday cooking. Common descriptions are mild, medium, strong, or kryddig. For chili heat, the Scoville scale provides a numeric measure of capsaicin. Other pungent compounds such as allyl isothiocyanate and gingerol contribute to pungency and aroma, complicating a single rating.
