Kruganki

Kruganki is a term used in some Slavic-speaking regions to refer to small round cookies, commonly ring-shaped, baked and served as a sweet accompaniment to tea. The name derives from the Slavic word krug, meaning circle or ring, with a diminutive suffix to indicate small rounds.

Most kruganki are made from a simple dough of flour, sugar, butter or oil, eggs, and a dairy component such as milk or yogurt. The dough is rolled or pressed to a uniform thickness, and round cutters are used to form circles; a smaller hole or ring may be cut from the center to create a true ring shape. The cookies are then baked until pale golden and crisp, though some regional versions are lightly fried for a softer texture. Finishes range from plain sugar dusting to sugar glaze, honey, or a thin icing. Some recipes incorporate vanilla, citrus zest, or chopped nuts in the dough.

Regional variants differ in texture and size. In some areas, kruganki are crisp, shortbread-like cookies; in others they are softer and cake-like.
