Käymisreaktioihin, known in English as fermentation, are metabolic processes that produce chemical changes in organic substrates through the action of enzymes. In essence, fermentation is a way for organisms, primarily microorganisms like yeast and bacteria, to extract energy from carbohydrates in the absence of oxygen. This anaerobic process involves the breakdown of glucose into simpler compounds.

There are several types of fermentation, each characterized by its end products. Alcoholic fermentation, commonly carried out by yeast, converts glucose into ethanol and carbon dioxide. This is the fundamental process behind the production of alcoholic beverages such as beer, wine, and spirits, as well as the leavening of bread. Lactic acid fermentation is another important type, where glucose is converted into lactic acid. This occurs in muscle cells during strenuous exercise and is utilized in the food industry for making products like yogurt, sauerkraut, and kimchi.

Other forms of fermentation exist, including propionic acid fermentation and butyric acid fermentation, each yielding different characteristic byproducts. These reactions are not only vital for food production and preservation but also play crucial roles in various industrial processes and in the natural cycling of matter within ecosystems. The efficiency of fermentation in terms of energy yield is lower than aerobic respiration, but it allows organisms to survive and thrive in oxygen-deprived environments.
