Jogurtas, also known as yogurt, is a dairy product produced by the bacterial fermentation of milk. The milk is typically heated to a high temperature, which kills any undesirable bacteria, and then cooled to a temperature that favors the growth of specific lactic acid bacteria, most commonly Lactobacillus bulgaricus and Streptococcus thermophilus. These bacteria consume lactose, the sugar present in milk, and produce lactic acid as a byproduct. This lactic acid lowers the pH of the milk, causing the proteins to denature and coagulate, resulting in the characteristic thick, creamy texture of yogurt.
