Fettsäurenlängen refers to the length of fatty acid chains. Fatty acids are carboxylic acids with a long aliphatic chain, which can be either saturated or unsaturated. The length of this aliphatic chain is a key characteristic that influences the physical and chemical properties of the fatty acid and the fats or lipids that incorporate them.

Fatty acid chain lengths typically range from 4 to 28 carbon atoms. Shorter chain fatty acids, such as butyric acid (4 carbons) or capric acid (10 carbons), are generally more soluble in water and have lower melting points, existing as liquids at room temperature. Medium-chain fatty acids, like lauric acid (12 carbons) or myristic acid (14 carbons), have intermediate properties. Long-chain fatty acids, for instance, palmitic acid (16 carbons) or stearic acid (18 carbons), are less soluble in water and have higher melting points, often being solid at room temperature. Very long-chain fatty acids can extend beyond 22 carbons and play roles in specialized biological functions.

The length of the fatty acid chain is determined during fatty acid synthesis. In biological systems, this process involves the sequential addition of two-carbon units derived from acetyl-CoA. The chain length is regulated by specific enzymes. The distribution of fatty acid chain lengths within a triglyceride molecule significantly affects the properties of fats and oils, influencing their texture, melting behavior, and nutritional aspects. For example, the presence of shorter or unsaturated fatty acids generally leads to oils with lower melting points.
