Esiskeittely

Esiskeittely is a Finnish term for a preparatory heat treatment used in cooking and food processing. The word combines the prefix esi- (before) with keittely (cooking or boiling) and is commonly equated with blanching or parboiling in culinary and industrial contexts. The purpose is to inactivate enzymes that cause color and flavor changes, reduce surface microbial load, preserve color and texture, and shorten subsequent cooking time. It is widely used before freezing, canning, or further cooking.

Process and methods: Foods are cleaned and cut, then heated briefly in boiling water or steam to a partial degree of doneness, followed by rapid cooling in ice water to halt cooking. After draining, the product may be frozen, canned, or used in later steps. In some cases, small amounts of salt or lemon juice may be added to help color retention or flavor stability.

Applications and examples: Esiskeittely is common for vegetables such as broccoli, green beans, carrots, cauliflower, peas, and spinach, and it is also used for some legumes and herbs.
